If you have administrative staff or advocates who run multiple applications simultaneously or who manipulate large spreadsheets, a large monitor may not be sufficient for their purposes.   Georgia Legal Services Program uses an inexpensive, easy-to-build dual-monitor display setup.

The instructions (and a pic) for setting up the dual-monitor display are attached.  Yes, you too can use low-tech phone books as monitor stands.
